  • 2 eggs
  • 1/5 avocado
  • 1/4 cup spinach
  • 1/4 cup arugula
  • 1/4 tomato
  • 1 almond flour tortilla


  • Heat pan and cook eggs for 3-4 minutes – can cook them any preferred way!
  • Lay tortilla flat, add and mash avocado, add eggs, spinach, arugula and tomatoes.
  • Wrap burrito, add back to the pan (fold face down) for a minute or two to crisp tortilla, flipping halfway through.
