  • 1.5 cups oats
  • 2 tbsp chia seeds
  • 2/3 cup carrots grated
  • 1 tsp honey
  • 1 tsp cinnamon
  • 1/3 cup yogurt
  • 1.5 cup almond milk
  • 1 tbsp walnuts crushed


  • Begin carrot cake overnight oats by grating your carrot.
  • Add all ingredients except walnuts to a bowl – oats, chia seeds, grated carrots, yogurt, honey, cinnamon and almond milk.
  • Place mixture into the fridge and let sit overnight or for at least 15 minutes.
  • Serve with a dollop of yogurt and walnuts or whatever toppings you desire!
