  • 1 pan
  • 1 sauce pan


  • 2 tbsp olive oil divided
  • 1 shallot chopped
  • 1 clove garlic minced
  • 1 tsp red pepper flakes
  • 1/4 cup tomato paste
  • 1/2 cup coconut milk
  • 8 oz ground turkey
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 tbsp Italian seasoning
  • 2 cups cauliflower gnocchi Trader Joe's
  • 2 cups arugula


  • Heat sauce pan over medium and add 1 tbsp olive oil, followed by shallots, garlic and red pepper flakes. Let cook for a couple minutes. Add tomato paste and coconut milk. Once everything is combined, reduce heat to low.
  • In a separate pan, heat pan and add 1/2 tbsp olive oil. Once oil is shimmering, add ground turkey, salt, pepper and Italian seasoning. Cook until turkey browns, breaking apart pieces as you stir to cook evenly. Once turkey is cooked, add to sauce pan.
  • Heat pan and add 1/2 tbsp olive oil. Add cauliflower gnocchi and stir until it is cooked through.
  • Add gnocchi to the sauce pan and stir to coat with sauce. Add arugula and cook it down for just a minute or two to warm everything through. Serve and enjoy!
