Ingredients
  

  • 1/4 pound chicken thighs
  • 1 1/2 Tbsp olive oil
  • 1/2 Tsp pepper
  • 1/2 Tsp salt
  • 1/2 Tsp garlic powder
  • 3 tortillas We love cassava flour tortillas from Siete.
  • 2 Tbsp onion diced
  • 2 Tbsp cilantro
  • 1 Tsp lime juice
  • 1 avocado
  • 1 Tbsp mayonnaise avocado oil based

Instructions
 

  • (If using an oven) Preheat oven to 400 degrees Fahrenheit.
    Marinate chicken thighs with olive oil, salt, pepper and garlic powder.
  • Place chicken on a pan and bake for 30-40 minutes.
    If using an air fryer, bake for 11 minutes at 400, flip, and bake for another 6 minutes.
    (Set aside once finished cooking)
  • While chicken is cooking, dice onion and cilantro and add to a small bowl.
  • Mash your avocado and add avocado mayonnaise until fully mixed. Feel free to add as much water as you’d like to created a more liquid consistency.
  • Dice chicken into small pieces.
  • Heat tortillas and place on a plate to assemble tacos.
    Add chicken, onion and cilantro and avocado cream on top. Top with as much lime juice as you’d like! Enjoy!
