Ingredients
  

  • 1/4 cup coconut flour
  • 1/4 tsp baking powder
  • 3 eggs (4 if they are small)
  • 2 tbsp coconut oil
  • 2 tbsp coconut milk can use any milk alternative
  • 3 tbsp honey
  • 1/4 tsp vanilla extract
  • 1/2 cup blueberries

Instructions
 

  • Preheat oven to 350 degrees.
  • Mix dry ingredients in one bowl. (coconut flour and baking soda)
  • In a separate larger bowl, mix wet ingredients. (eggs, oil, milk, honey, vanilla extract)
  • Mix dry and wet ingredients together, once fully mixed fold in blueberries.
  • Line muffin tin and add batter. Bake for 20-25 minutes.
