Lemon Garlic Shrimp Spaghetti

Ingredients
  

  • 10 shrimp
  • 4 oz spaghetti
  • 1 cup arugula
  • 1 tbsp lemon zest
  • 1 tbsp lemon juice
  • 1 tbsp garlic minced
  • 2 1/2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp red pepper flakes
  • 1 tbsp parmesan optional

Instructions
 

  • Bring a large pot of salted water to a boil.
  • (While you are waiting for your water to boil)
    Add shrimp, garlic, salt, pepper, red pepper flakes and lemon juice to a bowl and let sit for a few minutes.
  • Add spaghetti to boiling salted water and cook for 2 minutes under desired box cooking time. (This is typically around 7 and a half minutes for the gluten free options or 6 minutes for regular spaghetti)
    We will leave the spaghetti al dente and finish cooking it in our pan.
  • Add 2 tbsp of olive oil to a pan on medium-high heat. Once hot, add shrimp to the pan and sear on both sides for around 3 minutes each.
  • Once shrimp is cooked, set aside. Turn heat off. We will add it back in once pasta is fully cooked.
  • Once pasta is cooked until al dente, drain water saving about 1/4 cup. Turn heat back on the pan, add pasta and 1/4 pasta water to the pan with remaining garlic oil and seasoning.
    Add lemon zest and another 1/2 to 1 tbsp of olive oil if desired.
  • Let cook until pasta water is completely absorbed. (About 2 minutes) Turn off the heat.
  • Add arugula and shrimp to finished pasta. Feel free to add any additional salt, pepper, lemon zest or parmesan cheese if you wish!
  • Serve and enjoy!
