  • 1 package heart of palm pasta Trader Joe's brand
  • 1/3 cup pancetta
  • 1 lemon
  • 1 tbsp olive oil
  • 1 tbsp cashew goat cheese Optional if you want to add creaminess to your dish, feel free to sub with any other dairy-free cheese alternative or cheese! We love Treeline cashew based goat cheese.
  • 1/2 tsp salt
  • 1/2 tsp pepper


  • Add pancetta to a heated pan, once it starts to cook add garlic and diced shallot.
  • Once onions, pancetta and garlic are cooked through add heart of palm pasta to pan. 
  • Spread pasta so it cooks evenly. 
  • Add the zest of one lemon and 1 tbsp of lemon juice.
  • Add olive oil, salt and pepper to taste.
  • (Optional) Add cashew cheese if you’d like a creamier consistency.
  • Serve and enjoy!
