
Lemony Heart of Palm Pasta with Pancetta

- 1 zester/grater
Ingredients
- 1 package heart of palm pasta Trader Joe's brand
- 1/3 cup pancetta
- 1 lemon
- 1 tbsp olive oil
- 1 tbsp cashew goat cheese optional if you want to add creaminess to your dish, feel free to sub with any other dairy-free cheese alternative or cheese! We used Treeline brand cashew based goat cheese.
- 1/2 tsp salt
- 1/2 tsp pepper
Instructions
- Add pancetta to a heated pan, once it starts to cook add garlic and diced shallot.
- Once onions, pancetta and garlic are cooked through add heart of palm pasta to pan.Â
- Spread pasta so it cooks evenly.Â
- Add the zest of one lemon and 1 tbsp on lemon juice.
- Add olive oil, salt and pepper.Â
- (Optional) Add cheese if you’d like a creamier consistency!
- Serve and enjoy!
