  • 2 eggs
  • 2 tortillas almond flour
  • 1/2 mini cucumber
  • 1/3 cup arugula
  • 1 tbsp feta cheese
  • 2 tbsp pickled onion
  • 1/2 tsp sea salt
  • 1/2 tsp pepper
  • 1/2 tsp red pepper flakes
  • 1/2 tbsp olive oil


  • Add olive oil to a pan and let heat on medium setting.
  • Cook two eggs for 2-3 minutes on each side.
  • Heat tortillas on a pan or stovetop burner for 10-30 seconds on each side
  • slice half of your Persian cucumber.
  • Place both tortillas on your plate, top with arugula, eggs, sliced cucumber, pickled onions, crumbled feta, salt, pepper and red pepper flakes.
