Ingredients
  

  • 1 lb Potatoes
  • 1 shallot
  • 3 Persian cucumber
  • 1 tbsp lemon juice
  • 2 tbsp olive oil
  • 2 tsp salt
  • 1 tsp pepper
  • 1/4 cup cilantro
  • 2 tbsp feta

Instructions
 

  • Start by cleaning potatoes and bringing a large pot of water to boil.
    Add potatoes to water and let cook for 12-14 minutes.
  • While potatoes are cooking –
    Finely chop shallot and persian cucumbers. You can also chop your cilantro leaves but we prefer not to for this recipe!
  • Once potatoes are done and cooled for a few minutes. Cut into pieces of your desired size and add to a large bowl.
  • Add cucumbers, shallots and cilantro to your bowl.
    Cover with olive oil, lemon juice, salt and pepper. Mix well.
  • Sprinkle feta on top and enjoy!
