Ingredients
  

  • 4 oz pasta
  • 2 tbsp olive oil
  • 2 tsp garlic minced
  • 1 zucchini
  • 1 cucumber chopped
  • 1 cup arugula
  • 1 cup spinach
  • 3 tbsp pesto
  • 2 tbsp feta sheep’s milk
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp salt
  • 1 tsp pepper
  • 12 oz shrimp

Instructions
 

  • Bring a large pot of salted water to boil.
  • Once water is boiling, add pasta and set timer for 7-8 minutes. Set aside once cooked.
    While waiting for the pasta to boil, chop zucchini and cucumber.
  • Heat a pan with one tbsp of olive oil.
    Once pan is hot, add minced garlic, salt, pepper and shrimp. Cook on each side for 3 minutes.
  • Set shrimp aside, add chopped zucchini to the same pan. Add a touch of olive oil if desired. Cook for 4-6 minutes, stirring as needed.
  • In a large bowl add cooked pasta, cooked zucchini, chopped cucumber, arugula and spinach.
    Add pesto, lemon juice, lemon zest and mix well.
  • Top with feta, salt and pepper as desired.
  • Serve and enjoy!
