  • 1/3 cup quinoa
  • 1 cup arugula
  • 2 eggs
  • 1/2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp Red pepper flakes
  • 1/6 avocado


  • Start by cooking your quinoa, use a 2:1 water ratio. Cooking takes anywhere from 8-15 minutes.
  • while quinoa is cooking, prepare your eggs however you like! For this dish we love soft boiled or fried eggs.
    for over easy, add eggs to a heated pan with olive oil or avocado oil. Cook on both sides for about 2-3 minutes.
    For soft boiled, add eggs to boiling water for 7 minutes. Remove and place in an ice bath to stop them from cooking, keeping the yolk soft.
  • Once quinoa and eggs are prepared you can begin preparing your bowl!
    Add arugula to the bowl, drizzle with olive oil, add quinoa, eggs, salt, pepper, red pepper flakes and avocado. Enjoy!
