Ingredients
  

  • 2 slices sourdough bread
  • 1/2 cucumber
  • 1/2 zucchini
  • 1/2 tbsp olive oil
  • 1/2 tomato
  • 1/3 avocado
  • 1/4 cup pickled onion
  • 1/3 cup arugula
  • 1 tbsp vegan mayonnaise
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions
 

  • Thinly slice zucchini, cucumber, avocado and tomato.
  • Add sliced zucchini to a heated pan with olive oil salt and pepper for about 5 minutes, flipping to brown sides evenly. While the zucchini is cooking, toast your sourdough if you prefer.
  • Add mayonnaise (we prefer an avocado oil based vegan mayo) to one or both sides of your bread.
  • Layer on zucchini, cucumber, avocado, tomato, pickled onions (find our pickled onion recipe on the Recipe Blog) and arugula. Season with salt and pepper and enjoy!
