Rainbow Veggie Sandwich
This sandwich alone could fill your daily requirement for vegetables, including gut-healthy pickled onions.
- 2 slices sourdough bread
- 1/2 cucumber
- 1/2 zucchini
- 1/2 tbsp olive oil
- 1/2 tomato
- 1/3 avocado
- 1/4 cup pickled onion
- 1/3 cup arugula
- 1 tbsp vegan mayonnaise
- 1/2 tsp salt
- 1/2 tsp pepper
- Thinly slice zucchini, cucumber, avocado and tomato.
- Add sliced zucchini to a heated pan with olive oil salt and pepper for about 5 minutes, flipping to brown sides evenly. While the zucchini is cooking, toast your sourdough if you prefer.
- Add mayonnaise (we prefer an avocado oil based vegan mayo) to one or both sides of your bread.
- Layer on zucchini, cucumber, avocado, tomato, pickled onions (find our pickled onion recipe on the Recipe Blog) and arugula. Season with salt and pepper and enjoy!
